Vinification
The grape is gently destemmed, then it macerates for a short period. Afterwards it is softly pressed before the decanting process which clears up the obtained must. The must ages at controlled temperature in stainless steel tanks. When the fermentation ends the must is kept on the yeast for 6 months. The bottled wine is then kept in thermo-controlled rooms for about 2 months.
Tasting Notes
Straw colour and green shades. Expressive and strong perfume which reminds of litchis, elder, black currant, star fruit, wild sage, asparagus, lime, passion fruit, pink pepper. It starts with a fresh and fruity sensation, then it gets sapid and soft. You’ll taste the same sensations as for your nose plus white peach, Fuji apple and nettle. Pink grapefruit aftertaste.
Pairings
Perfect as aperitif, it pairs well with asparagus, vegetable soups, legumes creams and marinated fish.
